
La Quintessence restaurant & Winebar provides an extraordinary culinary experience in a warm, comfortable ambience. The cuisine created by our chef Jean-François Lalandec has earned La Quintessence a Four Diamond rating, awarded jointly by the CAA and the AAA.
Chef Lalandec has been back with us since October 2010, having been a major participant in the restaurant’s opening in 2003. Son and grandson of a chef, he grew up in a seaside restaurant in Bretagne. After completing his studies in agronomics, he decided that travel and exploration would be the best way to begin his professional life and then, six years later, settled with his family in the Laurentians.
The Chef and his team offer French cuisine as interpreted by a seaside Breton, inspired by the flavours of his travels and the terroir of Québec.
One can enjoy the fine cuisine all day long. Whether you’re in the restaurant or on the terrace, in the Winebar, at the Chef’s Table (a private greenhouse) or in the comfort of your suite, you’ll be sure to enjoy the experience.

Winebar and Cellar
Our winebar allows you to relax and enjoy a warm, contemporary lounge atmosphere. Our wine list offers you a selection of wines by the glass, aqua vitae, a surprisingly wide range of ports and an incomparable choice of Scotch whiskies.
Are you a wine lover? Our sommelier and his team will guide your discovery of our various wines, whether during your meal or simply in the tasting room that adjoins the cellar. This latter boasts close to 5,000 bottles in more than 500 square feet of surface area. With its controlled temperature, it’s well worth a visit, and its large tinted windows enhanced with wrought iron also allow you to observe our sommeliers at work.
